Adorable and delicious, these egg salad sandwiches are easy to make!
6 slices Fresco white bread
Finely chop peeled hard boiled eggs.
In a bowl, combine chopped eggs, mayo, mustard, and salt.
Cut two circles out of each Fresco bread slice using a round cookie cutter. Avoid the crust. (Save the holed slices for Toad in a Hole Sunshine Egg Bread)
Layer the tea sandwich starting with a bread circle then a scoop of a tablespoon of egg salad. Top with another bread circle. Skewer tea sandwich with a cocktail fork and tuck in a sprig of parsley as garnish.
